Pickled Mango Relish & Grilled Chicken
- Yield: 4 Servings
- 1 lb. boneless skinless chicken breast halves
- 1/2 cup Wish-Bone® Italian dressing
- 6 Vlasic® Bold & Spicy Sweat Heat Stackers® diced
- 1 container (7 oz.) diced mango drained
- 1 Tbsp. pickle brine from jar
- 1 Tbsp. red onion finely chopped
- 1 Tbsp. cilantro and/or parsley finely chopped
- Season chicken with salt and pepper. Grill or broil chicken, turning once and brushing with Italian dressing, until chicken is done.
- Meanwhile, combine remaining ingredients in medium bowl.
- Serve relish over chicken. Relish is also terrific served over grilled or broiled salmon, shrimp, burgers and pork.
